My Version of "Proscuitto and Caremalized Onion Pizza"

My roommate and I love to find recipes and take a stab at them for dinner every week. We were joking last night about how we needed to start filming ourselves in the kitchen. We don't exactly have all of the everyday cooking utensils (although we have a good bit), but we seem to make do just fine!

As I have said before, I am obsessed with the Pioneer Woman. I found a recipe that I was dying to try, so I did just that. It was a proscuitto and caremalized onion pizza and boy was it devine! I can only imagine what the PW's tasted like! I didn't fool with the mess of making my own dough or anything like that. I actually tried to get the refrigerated dough from Publix, but they were out. I decided just to use one of those ready made thing pizza crusts. The other ingredients consisted of EVOO, salt, garlic, brown sugar, red onion, proscuitto, and mozzerella.

As you can tell, they are just slightly different, but it still tasted FABULOUS!!!

Hilton Head for the Long Weekend

We were so fortunate this past weekend to be able to go down to Hilton Head, for virtually free! Brandon's friend Buffet, who really looks like Jimmy Buffet, didn't have anyone renting his house, so he allowed us to stay and just pay the cleaning fee! We had such a great group of friends down there! Here are some pictures of the beautiful home we stayed in!

Some more from the great weekend - Saturday we went to the beach all morning. After the beach, we went on the boat, over the way to Daufuskie Island to go to Marsh Side Mama's. Good times! That night we made a great seafood pasta dinner and hung out by the pool the rest of the night. Sunday we got up, ate breakfast, headed down to the pool then out to eat lunch. After lunch a few of us came back to the house to enjoy the rest of the afternoon in the pool. That evening we made some basil and garlic hamburgers! They were "De-lish!" We spent the rest of the evening playing cards and watching The Office recaps. Sunday we ate some breakfast, packed, and headed back for the dreadful rain in Columbia!

I hope everyone had a wonderful and safe Memorial Day Weekend! Thank you to all of the American Soldiers who give their lives for our country - that is what Memorial Day is all about!

R.I.P Kelli Bullard

Saturday, May 1, 2010 a very dear friend passed away. She was involved in one of the boating accidents that occurred Saturday night near Suzie Ebert Island. Ironically, Suzie Ebert was also killed hear in a boating accident many years ago. I woke up to the news Sunday morning and have felt numb ever since. I thought to myself all day long about how much I take my life for granted. I tried to remember all of the wonderful times I was fortunate enough to share with Kelli. The lake is a dangerous place, especially so late in the night. That is something I rarely think about when I am on the lake. This could easily happend to anyone at anytime on the lake. Although, it is very difficult to understand why these things happen, it is comforting to know that Kelli is in such a better place.

My Fab Weekend

I had such a wonderful weekend! After work Friday, my sister-in-law Emily and I drove up to Charlotte to see the Broadway play Jersey Boys. If you have not seen it, you definitely are missing out! I saw it the original cast on Broadway in 2005, last summer in Atlanta, and again Friday in Charlotte! It truly is amazing!

We got home late Friday night and hit the bed immediately. We had to be up at the crack of dawn for Junior League. Junior League hosted a new fundraiser "Touch a Truck." It was a huge success! The old Target parking lot on Decker Blvd was filled with all kinds of different TRUCKS - firetrucks, police trucks/cars with their police dogs, dump trucks, garbage trucks, monster trucks, CAT trucks, and the list goes on....there was also entertainment for the families to enjoy! I worked a 6 hour shift at the tickets table. The wind was horrible and I was definitely covered in pollen by the time it was over, but I am very glad it was such a success for the Junior League!

Saturday night was a much needed outing with great friends! We started off with dinner at Ale House, then ventured off to various places for a night out on the town! So much fun! Monday came, and it was back to the grind. YIPPEE!!!! Do you hear the sarcasm coming from my mouth!!!?!!!

'BLACK HEELS' COMING TO THE BIG SCREEN!!!

I knew it! I knew it! I knew it! I just darn knew it!!!! The Pioneer Woman's blog "Black Heels to Tractor Wheels" is coming to the big screen! I am so exicted! Even better, Ree (The PW) is being played by Reese Witherspoon. I am telling you, when I was reading her saga, I could not take my eyes off of it!

Happy St. Patrick's Day

I hope everyone wore their green today!

WOW! It has been a busy month! The first weekend in March we traveled to Clemson/Greenville for the baseball game, then back to Columbia for the Sunday game. My weeks have been filled with of coarse work, working out, and Junior League. This past Saturday my roommate and I hosted a pre-5 Points brunch at our house. It turned out great! We are only a couple blocks away from 5 Points so it is a great place to gather and walk from there. I wish I had some pictures, but unfortunately I have misplaced my camera. Luckily, I have another camera and the battery is charging for the upcoming weekend! We are celebrating my brother's 30th birthday in Charleston. SHHHH, IT'S A SURPRISE! I am really excited!
